Was de kop en de poten en zet ze op het vuur met zoveel kokend water dat ze bijna onder staan, voeg gesnipperde ui, zout en laurierblaadjes toe. Laat alles koken tot het vlees makkelijk van de beentjes los laat (1½ à 2 uur). Neem het vlees van de kop en de poten en hak of maal dit fijn. Voeg zo veel gezeefde bouillon toe dat een smeuïg geheel ontstaat. Maak de massa op smaak af met de specerijen, azijn en gehakte uitjes en augurken.
